Update on our Quarantine and Banana Bread
Things have changed very little from our last update. This in part because our situation hasn’t improved and we are still ruled by the Covid-19. Cases have increased in some areas whereas others as the Guayas Province we can see minor improvement.
The situation at home thankfully has changed little, this in part because we are obeying the rules established by the government. Although on the only days that we have to leave the house we have been noticing more traffic on the streets. People are getting restless locked up at home, therefore are getting out more, I only hope that they do it responsibly. Wearing a mask and gloves if going shopping.
We are going grocery shopping once a month, and for little supplies we can always go to the corner store. Something that we have seen as an improvement is on our banana bread. After all, we are in the land of the bananas; this recipe is simple to make and only requires very few ingredients. I hope you give this one a try; we are sharing this recipe from San Francisco de Quito sitting at 9,350 feet above sea level; it is the second highest capital city in the world, following La Paz in Bolivia.
Easy to make banana bread
Note: the flour I get here in Ecuador YA brand has baking powder in it, therefore I don’t have it included on the list of ingredients. If you need to add this to the recipe, use ½ tsp. of baking powder.
Ingredients:
1 ½ cup flour
½ cup white sugar
¼ cup oil such as canola
2 ripe bananas
2 tbsps. water
2 eggs
¼ tsp. cinnamon powder (optional)
Dash of salt
Preparation:
Pre-heat the oven at 350 degrees
Prepare the baking dish, I use Pam cooking spray to prevent it from sticking at the bottom and sides.
In a bowl add all the dry ingredients; flour, sugar, salt, baking powder and cinnamon if using. Lightly mix and set aside. Then mash the bananas right before adding it to the mix to prevent it from getting dark. Incorporate the eggs, oil, water, mashed banana into the same bowl, and mix until fully incorporated.
Pour over the prepared baking dish and bake for 40 minutes or until done.
