On Mother’s Day, Dia de la Madre, mothers deserve to have their desserts. This dessert recipe post is one of the easiest there is to prepare because it is made with Jell-O. Back home in Peru this was our best option to impress mom on her day.  It needed some planning because we had to refrigerate one can of evaporated milk for several hours before making this, but here in the USA we can use Cool Whip instead. Still, it is better to make it the day before so that all is ready for your mom.

We prefer the red colored Jell-o for Mother´s Day but you can use any flavor-color to make this dessert a combination of whatever mom likes best will be ideal. Also you could add some fruit to the Jell-o but I like it smooth with a cherry on top!

Use any cake pan you prefer, round or square, and coat with some cooking spray on it or brush some oil on it to make sure it unmolds easily.

 

Ingredients:

1 box 3 oz. strawberry Jell-o

1 box 3 oz. cherry Jell-o

1 container 8oz. Cool Whip thawed

 

Preparation:

Starting with what will be the base; make the strawberry Jell-o as directed in the box and pour into the cake pan and leave to set for at least 3 hours.

For the filling in a big bowl dissolve the cherry Jell-o in 1 cup of boiling water, making sure all the sugar is dissolved, then add some ice cubes to cool it down (about 5 big ice cubes) mix until completely melted, and fold in the Cool Whip slowly and mixing gently until fully mixed. Spoon this filling on top of the straberry Jell-o. Refrigerate for at least 3 hours before serving.

 

Note: If using refrigerated evaporated milk beat until it doubles its size and fold in the cherry flavor Jell-O and continue the preparation.

 

You could cut up some strawberries and decorate the cake with it,  or serve by itself.
