Chilean Salad
We have to remember that the Spaniards introduced onions to South America and tomatoes originated from the Andes.
Ingredients:
1 onion white or red
1 tomato
1 lemon juice
Cilantro leaves chopped to make 3 tablespoons more or less depending on taste
Olive oil
Salt and pepper
Preparation:
Cut the onions in thin slices. If it is red onion taste it first; if it has strong flavor you should rinse them in running water, if it is still too strong soak them in salted water for 15 minutes. Slice the tomatoes similar to the onions so they look good together, if you prefer you can peel the tomatoes but it is not necessary. Mix them together in a salad bowl and add the cilantro, olive oil, salt and pepper to taste.
