Papaya and what to do with it
Papaya is produced in the Peruvian jungle, but here I found one from Mexico. This fruit is famous for its digestive and anti-inflammatory properties, it is also rich in calcium and vitamin B. Its rich color shows it and its sweet flavor makes this fruit easy to consume.
In Peru it is easy to find a juice vendor on the streets or in the market, offering you a good serving of papaya juice, I was so excited when I finally found this papaya which is more like the ones you will find in Peru, often enough I saw very small papayas and did not trust it, simply because it didn´t look right. This is how a papaya supposed to look, big. And once I cut it up, it looked perfect in color and I knew it would be sweet.
First you have to cut the papaya in half and remove the seeds, this is easy to do with a spoon. Then cut the papaya once more in half, peel each piece and cut it according to the recipe.
