Quinoa Pudding
This is a typical dessert dish in the highlands of Peru. It is served preferably hot, or make it just before serving dinner and keep at room temperature. Ideally you will offer this dessert if dinner didn´t include quinoa. The preparation time is about 10 minutes; making this dessert is simple and quick. Commonly in Peru some people will have just this dessert for dinner, but the portion size will be a bit bigger, simply because it is easy to eat accompanied by a cup of herbal tea.
Serves (4)
Ingredients
1 ½ Cups of cooked Quinoa
1 ¼ Cups of regular milk (or other milk you prefer)
½ Cup of raisins soaked in hot water (optional)
¼ Tsp. of Cinnamon
¼ Tsp. of Vanilla
3 Tbsp. of Sugar (or other sweeteners)
3 Tbsp. of Cornstarch dissolved in cold water
Preparation
In a medium size pot over medium heat, add the quinoa, milk, along with the cinnamon, vanilla, and bring to a boil. Then add the sugar to your liking mixing constantly to avoid sticking in the base of the pot. Finally add the cornstarch slowly and mixing constantly until you have a pudding consistency and it is ready to serve.
Toppings are optional you can sprinkle some cinnamon or add some almond slices if you like.
