Homemade Mayonnaise
Ingredients:
2 tsp. mustard (Dijon, yellow or even flavored mustard – we like the jalapeño mustard)
2 egg yolks
1/2 lemon zest and juice
Olive oil
Salt to taste if needed, it depends on the kind of mustard you are using.
Mix the mustard, egg yolks, lemon zest, and juice then add the olive oil slowly while whisking it until you reach the consistency you desire. Season with salt and pepper and you are done!
In case you are making a sandwich you can cut this recipe in half because you wont need as much as if you were making tuna or potato salad. Use it immediately.
